Sage Bistro adds Wagyu beef to menu

Metropolitan Community College’s Institute for the Culinary Arts Sage Student Bistro has added Kobe style beef to the menu. An introductory special discount will be applied to menu items featuring the new ingredient.
 
“This will be an excellent addition to our menu and the curriculum. Students will have the opportunity to work with, learn about and serve the most succulent and highly regarded beef in the world,” said Brian O’Malley, chef instructor.
 
The new ingredient addition follows the Institute for the Culinary Arts’ belief in using fresh, local ingredients; Imperial Wagyu Beef™ is a local company with the head office located in Blair, Neb. 
 
“Imperial Wagyu Beef is very excited to be selected as the Wagyu beef supplier to the Institute for Culinary Arts Program. It is a great honor to have an opportunity to work with our local higher education institutions,” said Lawrence Adams, president of Imperial Wagyu Beef. “We strongly believe this is a great opportunity to balance education and business. We will focus on multiple aspects of the relationship, including an understanding of cattle production practices, feeding and other key elements of the process knowledge we believe will help each chef in their future endeavors, locally or otherwise.”  
 
Wagyu is most often referred to as Kobe style when raised outside of the Kobe region of Japan. Wagyu beef is recognized by chefs around the world as the ultimate indulgence of beef. It’s signature buttery sweet flavor, juiciness and silky smooth texture is unlike any other beef produced.
 
 “We believe this will be a delightful menu offering for our dinner guests and we invite everyone to make their dinner reservations soon,” O’Malley said.
